The latest 7" Waveshares just need the alteration to the config.txt however they are sensitive and need a second file edited.

The default setting requires a really fast double tap, I had trouble with that too so I lowered the double click speed. Will having a mouse stop the touchscreen from working?

Is anyone considering building a 360 VR camera yet?

I am wondering if it is possible to use a cluster of zero1.3 as the individual camera controllers and a RPI 3 as a master to compile and output the streams as a 360 video.

Try the AV in (I'm assuming its a 4 pin headphone jack (tip+3 rings)
Problem is that there are several variations of connections.
The other thing to test is if will work without the other electronics.

You need to find the display driver chips docs and the main chips doc.
To power the pi you need to find a 5V tap.

BTW on ebay you can find a generic power adapter to power it.
