Is your screen connected to HDMI-0 or HDMI-1? The default for single screen is HDMI-0 (the one closest to the USB-C power jack). It was this. My available settings differ from yours. I only see composite selection, nothing else. Do you still have "enable_tvout=1" set? That's probably why. Instead of trying to create a framebuffer for a non-existent HDMI monitor that vnc will share, you can start vnc in virtual mode so that it creates it'...

Have you considered using gnuplot ? It's great for viewing data from files. Does a RPi 4 run (headless) with a SD card (latest Buster OS) that was created on a RPi3? I just expect the RPi 4 to arrive before the HDMI adapter... Assuming no "strange"/unusual entries in cmdline.txt or config.txt I would expect it to be O.K. Possibly worth updating/upgrading before trying. Trev.
