If you are connected via SSH then that is a separate session independent of the main (Desktop) session. So desktop is not running in your SSH session and you won't be able to run any GUI programs.
You will need to connect to the RPi with RDP or VNC to get a remote GUI session.

Use a port scan tool to see if your ports are forwarded properly

I have never used Pi Store so don't know about that.
The installation process of Libre Office should have added an [Office] entry to the main tray menus. (Icon in bottom left of tray).
Go to the [Office] menu and right click on any of the Office programs and select add to desktop.

I prefer to use IP to MAC address reservations under DHCP. Most newer routers support it. Doing this will allow you to leave the RPi in it's default configuration and your RPi will always be given the same IP of your choice. Not possible. The LCD needs a lot of the circuitry from the board to operate... then there is no feasible way to interface the RPi HDMI with the board.
