On the latest build if it detects HDMI it uses it, otherwise it reverts to RCA. Not both at same time. You probably would not want a multi monitor setup using RCA any way - the image quality isn't that great in comparison to HDMI.

You can have any image you want - it's a compressed file on the root of the SC card. Replace that and you replace your distro.

It doesn't use GRUB btw.

Note that the GPU is more powerful than that found in the Nintendo Wii. And there are some pretty good games on that! (Donkey Kong Country Returns rocks!)
