In the screenshot you posted all the fstab entries were commented out (line starts with #) The entry for /dev/mmcblk0p3 is incorrect in any case since it is mounting the file system at / (root). Sounds like you don't have a choice. You could try hot plugging the wifi dongle and see if that brings the interface up, but if you don't have physical access then that may not be an option.

If the card you're writing to is partitioned in the same way as the one you copied from then it should be writing to /dev/sdb2

Have you set a password for the new user? If you can't log in locally then its clearly a problem with the set up of the new user and nothing to do with ssh.

When you add a torrent through the web interface it includes an entry box for the destination folder; if the folder already exists you can just specify it there.

Check the actual CPU temperature with:
vcgencmd measure_temp
That should confirm if you've really got a problem or not.

You may well find that ntfs-3g doesn't support GPT formatting. It is a reverse engineered driver on a closed file system. Switch to MBR if you really must use ntfs.
