I guess now with the Pi 4 this is becoming relevant again. It would be so awesome to use a Raspberry Pi 4 as a capture device and USB3 should be plenty for 1080p at 30 frames, shouldn't it?

One DAW that would be a great candidate for the Raspberry Pi (not just the 3) would be LMMS. Unfortunately it doesn't have audio recording yet, but it's one of the best open source DAWs that I know of! It's also relatively resource friendly.
