If you have a 32GB SD card and expect that your backup fits on a 8GB SD card, chances are good that you have enough space left on your 32GB SD card to store your backup image without mounting an additional drive.

I assume that 4.00 MiB that's unallocated means that it is not expanded to use all space? If it does, should I add that unallocated space to the rootfs partition? If your raspberry pi isn't running headless, you can add init=/bin/bash to the kernel parameters in cmdline.txt
After booting into the command line execute

Then change the passwords and remove init=/bin/bash from the kernel parameters in cmdline.txt

You changed the DocumentRoot to /media/extdisc1/webstuff. You also need to give Apache the permission for HTTP access to this filesystem path. E.g. the permission for HTTP-access to /var/www is given in /etc/apache2/apache2.conf

You must not use the option "umask=000" when mounting a Linux filesystem.

It works, but it's scope ends when the script ends (if you don't source the script).

The gpiochip interface provides the times of GPIO events (gpiochip is the replacement for sysfs). You probably ought to be using that. However in my tests pigpio gives more accurate results. ...
