That's not much to go on. You have not provided the model of zero you are using or the OS that is installed on it, its distance from the router, make and model of router, distance of the PC from the router but still you expect help.

As long as you don't loose wireless connectivity, monitoring software such as motion should provide the video and a remote access service (vpn) should work to provide the feed to a remote site. Just keep the GD thing out of my neighborhood.

Disconnect the one pointed at the beach...simple as pulling out a USB connection. Use a directional mike on the forest to minimize the surf noise.

Forget the Chinese image and follow the wiki instructions on installing the drivers. Older distros before the 4B arrived do not fully support your computer. You need a fresh copy of Buster.

It is hardly an either/or proposition. For the minimal cost of an SD card and a bit of your time, you can try them all and see what you like. You will probably wind up with Raspbian but you may not be confident in that choice if you don't try some additional options..."paranoia strikes deep!"
