I'm not sure if I understood you correctly, you want to be able to broadcast a wireless hotspot and be connected to the internet via wireless in the same time, sharing the connection between both and also be able to access the web server on the Pi?

Why do you consider the hotspot that the iPhone provides to be not very good? I've had a similar situation and it performed well.

Update: using php's proc_open with input/output pointers seems to do the trick with running wpa_cli in interactive mode while setting up the network.

The only thing I found is that arecord is capable of displaying a percentage VU meter, but it seems that the device can't be used if one instance of arecord is using it.

I just installed vlc using sudo apt-get install vlc. Is that not using the HW acceleration or would it be possible to modify it in order to have it running? I can see a pretty much more than 50% cpu usage when I play an mp3 file while running X.
