Can(!) can-utils only deal with two can-controllers? SPI+CE0 and CE1? can-utils has nothing to do with can controllers count, but you need kernel support. there was information that (with correct DT overlay) it is possible use any GPIO pin as chip-select (so you could have more than two SPI slaves).

have you compiled DT overlay? have you enabled it in config.txt?
which kernel version are you using?

P.S. why do you want to use mcp2510? it is outdated, mcp2515 is definitely better. mcp2510 isn't cheaper or easier to buy.

another option: do not use usb hub at all, connect all dongles directly to RPi.
You need good RPi power supply to do that.
Possibly you need to use high-quality usb cables to get it working. Hardware mod could be necessary as well:
