The benefit of this is that gnome-disks is part of the Raspbian distribution so can be installed via apt or via 'Add/ Remove Software' ...

Gnome now uses wayland by default, and I'm sure there are still issues going from x86 to arm. The Debian team just squeaked by getting it into 10. You might be better off trying to get it up and running on Gentoo.
