Raspbian offers nearly all the same features as Ubuntu. What do you find missing in Raspbian? We can certainly help with that. But no, no one is currently porting the latest versions of Ubuntu to RPi.

You simply need to add on a Mini HDMI to HDMI adapter.

Just helps to regulate the 5V from your power supply. Not a big deal, unless you're using a really low quality PSU.

You are missing a gateway. I assume the traffic goes through your router first -- not a direct connection

Raspbian has all the same essential features.

What features of Ubuntu do you feel are not present, but necessary/wanted, in Raspbian? We can certainly help you with that. Just not porting an entire operating system.

No, that is correct. Windows can only see a small portion of the card. (the boot partition) The rest can only be read by Linux/Raspbian

Are you using the built in card reader on your computer? (This is a known issue)

It's also worth trying with right-click+run-as-admin

Yes, there is a free opensoruce program called rdesktop that supports Windows/Microsoft RDP connections. It is very minimalist. It could be also be a grounding issue...the HDMI connector is really the only real ground on the Pi.

You should be able to automate sending an email and generally you can email SMS/MMS messages. (ex. to text a Verizon cell phone, just do 1234567890@vtext.com -- it's different for every carrier)

This assumes that the phone has service though.
