There's the Alsa Modular Synth. I've never run it on a Pi, but no reason it shouldn't work. You'll probably want to get an external audio card or usb sound module to get quality audio. If you just want to fool with it at first, the onboard audio should give you an idea of capability.

Sounds as though midi note off messages are not getting through. Have you verified the keyboard isn't an issue by running a hardware synth or a Windows based softsynth without issues?
