What you are describing is a classic power issue. While the power supply you are using may start off fine it may have trouble keeping up with the current draw of the pi. If you have a volt meter you can measure the voltage going into the pi using the two test spots on the board. If the charger you ...

It just so turns out that in my room the keyboard works perfectly, oddly enough. Is it possible that one part of my house has some sort of interference that's messing with the USB? All I can say, try another keyboard/PSU.
Sounds plausible enough. I'll go dig around for some alternative keyboards! Is there any way I can get confirmation from the Pi about that, like an error message or something?
