Do your 5GHz and 2.4GHz networks have the same SSID and password?

If so, try changing one of them so they are different from each other.

No, but if it's a Zero W you could use a Bluetooth mouse.

Or you could enable VNC and use remote desktop from the host computer.

If your issue is OS/filesystem performance, then yes. If it's RAM or CPU related, then no.

Try it with an "A1" performance rated micro SD card, like the SanDisk Ultra A1 series. It should be much faster than a typical USB flash drive. Try this image I made for Pi Zero USB Gadget mode.

2019-04-08-raspbian-stretch-lite_Pi0USB.zip

It's ready to burn-n-boot (no edits needed). Write it to your card with Etcher and test it with no modifications. If it works, shut it down, then add your wpa_supplicant.conf file and test it again.

Works fine for me when writing a card with Etcher and adding/editing files from Windows, or mounting and modifying the image in Linux on my Pi Zero 1.3 (with a WiFi dongle) or Zero W.

Since it works for you with the default image, something must be going wrong when you are adding/editing files.

Did you reformat the 64GB card to FAT32? Cards larger than 32 default to exFAT format, which is not compatible with NOOBS.
