One of the first things I'll do is hook it to a 3840x2400 display via HDMI->DVI adapter. Ubuntu drove it out-of-the-box at full-resolution from a single-link DVI at 12Hz refresh rate.

The RPi does have SPI and a UART, not sure if you'll need some sort of buffer chips.
Mind you that these are autonomous external devices with their own commands to control them; you won't be able to just plug them in and have your X display expand onto them.

If you get a Model B, a USB wifi, and a USB keyboard with its own built-in hub to plug a mouse directly into it (like the wired Apple keyboards do), that's probably the lowest part- and wiring-count.

500mA is the _minimum_ reliable current that powered USB connections need to provide. Check any USB wall wart you've got hanging around; it probably delivers plenty above that to power the connected peripherals.
