IIRC
Fast Charge cables basically have the 2 data pins shorted,
so use one for for phone , and have a decent normal cable for your RPI , no need to keep swapping them around
use a decent 2.4A 5V usb PSU for the raspberry and not a fast charge device

you can use a watchdog to reset the Pi if it is hung - or on other conditions

in that case, get your HD partitioned up and formatted as ext4 find the UUID of the partition you want to use mount it to /mnt mount /dev/sda1 /mnt #[or whatever it is] rsync -va the contents of /home/pi to /mnt make sure it is owned by pi add an entry to /etc/fstab UUID=whatever /home/pi ext4 error...

I'm 99% sure that cat6 needs the pairs to be twisted and the twisted pairs to be twisted
flat cable can be made to be similar in xtalk to TP cables but it cannot be sold as cat6 [offically]

I've personally have no issues with flat cables , it's just installers and wire men do ....

as jamesh says Upload can simply go as fast as the router allows. Download requires the flow control since the Pi cannot handle receiving data at the full gigabit rate. so the router is shovelling out data as fast as it can - and the RPi cannot accept it at 1GB so you get dropped frames and stuff, r...

your warranty is still with the vendor though adding a fan may have killed it in other ways IMO it's possible the new power chip may have some issues in a batch - though warranty as before any date marking on the board may be useful to the general issue i'm not sure if you can supply 3.3v on that pi...

I've long since moved my RPi's to SSD variants so I cannot advise any working ones as my spinning runt devices have been re-purposed

you should have no issues iwth any newer 2.5" drive,
your bigger problem may be the usb / sata adaptor

in general all 2.5" drives will work via a usb adaptor , providing you are using a good quality PSU for the RPi, [no brown outs - stable 5V at the pi end]
newer drives will be better
in practice you may find issues with some , though those will probably be older ones
