OK, fixed the boot problem by inserting the SD card to a PC and modifying \boot\config.txt gpu_mem=256
System works now.
However still have the problem of max resolution of 480 when running both camera feeds.

Update: They're both Logitec C920. Worked perfectly on PI 3. I was able to run them both at 960x480 wide screen side by side. I've been trying to run the mplayers from two terminals as /video0 & /video1.
However /video1 didn't work.
Question: Why is that and will the cameras always work as /video0 & /video2 even after disconnecting them and reconnecting?

Can Mplayer display a feed from 2 webcams?
I finally managed to show a local feed from a USB webcam on my Pi 3 using Mplayer. No network, no recording, just play directly from webcam to the HDMI monitor. I found a Mplayer that is able to display a fast stream from my usb webcam and i'm leaning to use it. I just hope Mplayer can run two web cams at the same time.

Thanks HermannSW for the suggestions.
One thing I would need is at least 10+ frames per second from the cameras. I don't know if that's possible with 2 USB cameras on a PI.
Also, how do I install the gstreamer?

Have you seen a problem caused by uneven wear on an SD card? Why would you even worry about that?
Even the fast cards are inexpensive and you have an option to back them up, so that if something goes wrong, you can bring the image back.

All good now.
Found an hdmi monitor and was able to use it to run raspi-config and set boot to command prompt option. Upon rebooting my PITFT got the signal like before.
