Yes you absolutely can run a Plex server off this. That is exactly why I got mine. It depends on your level of comfort with linux but it can be done. Does anybody know of a minimal Raspbian install for the Raspberry Pi 2?

Not really looking for a net install, just one without the educational stuff and programming languages, etc.

If that's what you normally do, then yes, download the appropriate .img.gz file from the link and use whatever tool you like.

Rasplex 0.5.1 for RPi2 should be released later today.

Many users have Hyperion and Lightberry working, the latest release has better support for the drivers.

Have installed Raspcontrol as per above instructions for Apache, done the sudoers change, page loads OK but at the top is says "Failed to check for latest version", also the "About" and "Contact" buttons do nothing. Is this normal?
