there are missing linux-headers after the most recent system upgrade.
Did you try:
apt install raspberrypi-kernel-headers

But may-be the 64bits headers are not yet ready. If you use a 32bits kernel, this is not an issue.

You can set a NAT mapping on the router to your Pi port 3000, so that you access your Pi through the router IP adress and mapped port.

Yes, don't start your home page at boot, but only the camera live show.
Disable the dm systemd service.
Create a systemd service to run startx as your user at boot time, a $HOME/.xserverrc to run /usr/bin/X, and a $HOME/.xsession to run your live show.

You need to first shrink the first partition (it uses 50GB) to 256MB. Then, resize the second partition to use the remaining space.
