You have that kind of kit, which some could say (and did say) is a bit expensive, but at least you have everything and you don't bother yourself.
There's the special board for a 2.5" HDD with dedicated power supply input + a HAT for a DC 5V 4A power supply (stronger) + the case to hide all that.

Salut, Je me disais justement que les 600€ de frais pour activer l'option GPS sur l'écran tactile de ma bagnole étaient abusés quand on peut en faire un avec un RPi pour 100 balles (évidemment que j'ai refusé l'option...). Du coup, tu peux en profiter pour rajouter une option GPS dans ta liste... ;)...

Here is my little testing...
As I "locked" my Pi with a bad docker bridge command line (I do network access), and I don't know what to modify manually (as an USB drive) to fix that, I decided to reset it, so I tried the modified script, and it worked perfectly. ;)

Maybe, and I say "maybe", you can try to remove the "boot" flag from the partition using gparted.
If you can save the content before, just in case... Playing with partitions is never 100% safe.

I had the same problem about "Unable to create ROOT filesystem", and it was also with a SSD.
I didn't report it because then I said no to "copy" and I did it manually.

Si c'est la vitesse de boot ton problème, faut bien savoir qu'avec le Pi4, il n'y a pas encore de boot natif USB.
Du coup, tu bootes forcément de la carte SD, puis le système se charge depuis l'USB.

Le script est peut-être fait pour le boot natif USB disponible avec le 3B+.

I confirm that you have to set a resolution with raspi-config in order to have VNC to work.
I just enabled VNC in raspi-config and set the resolution, reboot, and it worked...

Ouaip, j'ai uniquement un Pi4. Mais tu as raison, y a un truc qui foire dans son script : ça me dit qu'il n'arrive pas à copier à cause d'un problème avec boot/root (j'ai pas compris le problème...). J'ai dû installer Raspian sur le SSD comme on le fait sur la carte SD, puis upgrade et configuration...
