OK, an update.

I messaged the seller who came back and said they would work, so I ordered some FullHD versions (and a 4K version just as a trial).

Both worked as expected, the 4K one lagged a bit via Teamviewer when set at 4K, but at FullHD they worked well.

Thanks for the replies, I did try the messing with the config.txt on another machine a while back, but that machine is currently quarantining with my parents running a pi-hole server so don't want to mess with that further at the moment. If you do change the config.txt does it cause any conflicts if...

I have a few Pi4s that I want to be able to remote into using TeamViewer but when I boot these units without a monitor they don't boot to a desktop that can be easily used (I've managed to boot to lowres desktops in the past though). I figured the non-standardised standard connector would probably be the problem. I think the reason the analogue-to-IP encoders aren't available and are expensive, is that there is very little call for them. The quality of the analogue CCTV cameras is so far below IP cameras it's not worth the effort, better to get a new system. For the £500 you could probably buy an NVR and 4x ...
