Since the drives aren't used constantly, perhaps you could try to set them to automount when accessed, by using x-systemd.automount to the appropriate fstab entries. How to find what start spinning my discs on RaspiOS

HI I created a NAS on my PI, set the spin down time for discs and it worked. It stay silent over the night when nobody worked on the Raspberry but since yesterday it's it start spinning about each 5 minutes. I cannot figure how. Is there a way to find it?

I mean if pi and the drives (the drives are mechanical 3,5") will be quite near the PSU which might induce electromagnetic field and damage the drive imho.

Is it possible to do the "live" backup of pi when PI is running by for example "dd if=/dev/sda of=/mnt/Main/backup.img status=progres" ? Supposing sda is my SSD from which the raspbian is running
