I have a problem with uart0 on Raspberry Pi4. UARTs 3 and 5 work fine. ttyS0 works, after command echo "hello" > /dev/ttyS0 I see on pin8(TXD1) the correct oscillogramm https://i.yapx.ru/HFVSw.jpg but after I send echo "hello" > /dev/ttyAMA0 I see nothing at all. Sorry, typo. You can find a lot of info on Node-Red forum. I don't use openhab in my projects, but tried openhabian and it works.

Place the soil sensor as near as possible to your pi. I don't know which i2c frequency you use, but for 400khz max length of i2c cable is around 2 meters(because of cable capacitance).
Also, it is better to add the pullout resistor for mosfet gate (because of miller effect).
