I'm not sure, but I think it has something to do with insufficient privileges.
I think I saw it when trying to start a service without sudo in front of the command.

Cutting the RPi Zero is not a good idea at all.
Have you googled? "smallest linux computer" gives a few hits. But none of them are significantly smaller than the RPi Zero.

Another option is to make a small web server using python, which can accept a text message, and then display that message on the screen.

Something similar to "Read data from a form" from this page:

I've used the EZ-WifiBroadcast package that uses RPi's for transmitter and sender.
The package requires specific Wi-Fi adapters to work. The internal Wi-Fi is not enough.
But maybe you can find out how they did it from the code.

I can't find any GPS signal switches, but why do you want to switch off the GPS signal?
The GPS signal in itself is so weak that any signal loss could mean loss of signal.
So adding a switch in the signal path could mean bad news for the head unit.

To remotely access the RPi you need to enable SSH. Put the micro SD card back into your Windows computer and find the drive called boot. No, that's a zener diode. You need a regular diode like a 1N400x. https://en.wikipedia.org/wiki/Flyback_diode I fear you are trying to do a project somewhat out of your reach.
