Thanks for the advice everyone. Now I've got my RPi 3B connected by ethernet to an IP camera. I understand that I need to set a static IP for the RPi and the camera. Setting a static IP for the Pi seems straightforward (https://www.raspberrypi.org/learning/networking-lessons/rpi-static-ip-address/)....

For some reason I thought you meant a multi-in 1-out (which I understand now is an HDMI switcher, not an HDMI splitter)... https://github.com/raspberrypi/linux/pull/2513 was merged on Friday, but hasn't hit rpi-update quite yet.
