As far as I know the HDMI port only serves as an output. To read the state of a monitor it would need to be an input as well. I might be wrong on this but everything I can find online does suggest this isn't possible with a Pi.

Usually the keyboard shortcut for fullscreen browsing is F11, could you try that?

Not unless you can find appropriate drivers and possibly a controller board. I'd say you're out of luck...

Not sure if this might be it but do you run arecord as sudo? Could be that it has no rights to write to directories/files.
