I strongly suspect that using SAMA over the public internet is a really bad idea from a security point of view. I am not getting the purpose of having a server for this project. If you simply use Wifi printers, your ~150 employees can print to any of them directly. Just hit Ctrl P, select the printer he/she want to use and click print. I am not seeing the point.

I believe you can buy any usb audio card, pick the cheapest from ebay. These cost a buck and a bit. The quality of the Pi's audio output is not that great from what I've heared, so a usb audio card is a good idea.

If you want to drive speakers, you still need to use an amplifier

Wifi works great. I have great experience with the app unified remote, costs about 4 buck something. It does work with a wifi router so I don't know if this works with setting up the pi as an acces point, though I believe it might.
