What is the output of 'uname -a'?
If it mentions an older version than 4.14.69 then you did not reboot your Pi after the last update.
Either that, or you have a more serious problem...

Would that make a difference? 'mount -a' works, so I would assume it uses the options that are in fstab.

Looks like the network is not yet ready when fstab is processed. You could try to activate 'wait for network' in raspi-config Alternatively you could create a systemd mount file. That makes it easier to wait for the network to be up before mounting the share. There are examples for the systemd file ...

I could have stripped off the cron timing and stuck "sudo" in front of the command. it's simply an illustration that you don't need to put to value for the backlight in quotes. I would add a section at the last stage you run (which one that is depends of course on which image you want to create).
So you could e.g. add directory '01-cleanup' to stage5.
Then add script '00-run.sh' to that directory and use that to run your cleanup actions.

Is the hostname in the form of hostname.local by any chance? That name has nothing to do with DHCP. It's avahi (mDNS) that broadcasts the .local name / ip address.
