Spontan würde ich dafür keinen Pi3 nehmen sondern eher PiZero(W), da der Pi3 für solch eine Aufgabe schlicht überdimensioniert wäre, wenn du pro Rollo jeweils einen Pi einsetzen möchtest. Da müsste eigentlich bereits ein Screensaver installiert/aktiviert sein. Guck mal unter: Menu > Preferences > Screensaver Preferences
Falls doch nicht müsstest du das Paket xscreensaver installieren und dann entsprechende Einstellungen im besagten Menü vornehmen.

Ich vermute mal du beziehst dich dabei auf WWW ? Du möchtest also deinen Pi auf einem bestimmten Port ansurfen und dann ein bestimmtes Unterverzeichnis geöffnet werden? Wenn dem so ist musst du das im Webserver einstellen, die Fritzbox behandelt nur den Port bzw leitet eingehende Verbindungsversuche...

You are correct, it needs new firmware blob for those reasons. As I understand it the relase will be specifically fo the Raspi DSI display - you probably will not be able to customise settings in the first release.
