AIY Voice v1 TRULY headerless

I just got my AIY Voice kit v1. I see that I can SSH to it to configure, or I have plug HDMI and go with an X interface.
Is it possible to build it with no X interface at all? I imagine it would be less bloaty and faster to boot?

I'm running Jessie Light. sudo reboot freezes my system, but the activity light continues for flash (I let it go for about 2 minutes before I pull the plug to reboot). Worked for me after this approach failed. (For a start, no-one mentions that it assumes you;re running the Pi without the GUI.)

That's not going to work since tight VNC server is already installed. The packages will conflict. Surely there has to be a way to get VNC server to run at boot time?
