It doesn't look like we use much of the powerful functionality of EasyWorship, so it looks like we could definitely use that better. I am not precious about using EasyWorship - so I might look into OpenLP or similar.

Would I just use a combination of VLC server and player to get the projectors up and running?

FWIW, with the new pi3-miniuart-bt overlay, Bluetooth works fine and stable with the Mini UART. I was able to scan, pair, send files over OBEX, and so on. It really depends what you are doing.
For example, I'm using OpenElec and was struggling to view h265's before (in RPi2B). Now they do work (RPi3B).

I'm definitely seeing the improvement.
