So a bit more playing around. Thankfully mjpg-streamer exists. With white balance and exposure on auto, streaming video does provide an image that isn't entirely grey. Funny thing but while I was waiting for my forum post to be approved, I stumbled on to the PI Spy entry system project that uses a 12V power source with a relay and step down converter.
