those are specially built devices. they are designed to operate in vacuum, and amidst a lot of radiation. a few challenges: can air escape the inside of the camera during rapid decompression, without damage.. can the camera get rid of built up heat it dissipates that cannot escape through convection...

One wire digital thermometers work, but using them with parasitic power (two wire mode) can be troublesome at best, especially if you use long wires and/or you use multiple sensors on the same bus.

a 3B+ is much more power hungry than older PI's, and in fact a 2.5A PSU is recommended. in most cases like this the PSU isn't the direct cause of the problem, but the cable is, with too thin wires the resistance is too high, and with more current flowing through it some voltage drop is expected over...
