Start by using official tools to verify that your "1TB" microSD card is indeed a 1TB card. Also note that "TB" is terabyte. "tb" would be terabit, which is 128GB.

When it comes to high capacity SD cards, the world is rife with fakes.

Why do you want to monitor the temperature? Unless your PC was made before the 21st century, there is no risk of it overheating unless you cover it with a blanket and sit a heater beside it. The RAM limit on Pi 0-3 is 1GB, only the Pi4 can take larger chips, theoretically up to 16GB I think but we only make them up to 8GB. One other point... 8.3GB on a Pi is a quite a lot of space. Unless you're storing large audio or video files, it should do perfectly well for the foreseeable future.

Minor point... Any time a mass storage device is mounted, the file system spans all existing mass storage devices plus the one just added. That's simply the way *nix file systems work.

RPiOS is the fully supported OS for all Pi models, including the Pi400.
