UDOO is a great concept but tailored for specialized markets - automation, robotics and media centers. Arduino can be connected to any ARM board with Firmata, so its not a big issue. What is really needed is for example PaspPi Pro, with dual or quad core ARM, and an add-on option for SPDIF audio out...

Xenomai kernel on Raspberry is being used by LinuxCNC project.
I have not tried it myself yet (albeit not for media center, but for machinery motor control).

Have you tried to overclock Pi to 1GHz, and use Xenomai real-time kernel framework, in order to overcome speed and latency problems?
