There is a vnc app for idevices, but it is 9.99. There are free and non-free vlc apps as well but I haven't tried them on linux, although they work tolerably well for winxp.

I'm no expert but you could use 2 usb dial up modems and a null modem cable if you could get the modem drivers to work.
