Would this cheap 3.2" Touchscreen TFT LCD Module Display interface with the Raspi using the GPIO (or any other source)?

It seems you need a lot of IO pins for this display, as just the data bus is 16bit.
I would try the MCP23S17 from microchip, an SPI port expander, you can connect several (up to 8) on the SPI bus, then modify the software to use the SPI bus.

Or just buy a $20 640x480 composite LCD from eBay...
