I have discovered this 7 inch screen with a touch panel:
http://www.ebay.com/itm/VGA-AV-HDMI-tft-Driver-board-7inch-AT070TN92-touch-panel-800-480-16-9-TFT-/180848852950?pt=LH_DefaultDomain_0&hash=item2a1b6e7fd6#ht_4913wt_1165
It looks pretty great! Also, it seems like it would work pretty easily with the Pi. But I do not know very much about anything. Am I correct in assuming that this would be easy to make work?
Will this 7 inch touch screen work?

While the RCA would be easy enough to use with it, the vga part (if that plug was even actually vga) you'd have to get an hdmi->vga converter, and those normally are fairly expensive if they support HDCP as VGA doesn't have that, and they have to add a chip in.
Also, just to note, the one you linked to specifically, while it does have a touch screen, it does NOT have a touch screen controller. So you'd have to buy one of those, or use the GPIO pins to work as one.

VGA won't work with HDMI.
Someone might suggest using a DVI to HDMI adapter with a DVI to vga adapter.
This will not work as HDMI is running solely on an a digital signal.
VGA is an analogue signal.
Some DVI (DVI-I and DVI-A) will support analgue, but that is because the device is specifically analogue, or supports both analogue and digital.

Why is this panel will not work? Why did you start talking about the HDMI-VGA adapter? The controller of this panel have HDMI. Question about the touch panel is open, it probably will not work. But the panel will work fine HDMI Raspberry-pi + HDMI panel . While a very good price! If I'm wrong, correct me. Sorry for my English.
