magtek card swipers typically use keyboard emulation, they are more or less plug and play on any windows platform.
would it be that easy on the pi? Or would special drivers or software be required?

I suspect they just pretend to be a keyboard on the USB bus. The OS has no way of knowing it is not. So the 'pi will completely fall for the deception.

I've had a usb barcode scanner working on the pi in exactally the same way 
no reason why it shouldnt work that i can see, as long as it presents itself as a keyboard
