I would like to run CUPS on my Raspberry Pi:
Can I run CUPS by itself, if not what OS should i use ?

Raspbian.
apt-get install cups and you're done !

If you meant CUPS as in the printing system, I thought that was UNIX only...

Well, CUPS is actually for any "UNIX-like" system, including Linux, xBSD, Apple OSX, Solaris etc, so it should be possible to run it on any version of Linux used on the Pi.

Yeah, I've run CUPS on mandrake and I remember seeing it in my Ubuntu setup.
Any *NIX system should have it. If it's not part of the base install, look in the distro library that you installed from.
