Adjusting the power saving settings

I'd like to increase the time it takes for the Pi to decide to blank the display when "not in use". I always find it disconcerting when I am in the middle of a computer doing some lengthy task and I look up to see the display is black. My first thought is always that something has gone wrong. :)

How can I adjust that setting? I can't find anything indicating where to look.
